Squid needs to be cooked either really quickly or really slowly otherwise it is tough.
Always pan-fry your fish with the skin side done first so it crisps up – soggy skin is a sin!
Fish can be steamed, poached, grilled, baked, pan-fried or sautéed. Shellfish should be boiled as well as some of the other methods.
Keep fish moist, especially when you pan-fry it by basting it with butter.
Fish can be eaten raw, like sashimi, as long as it is “sushi-grade” or partly cooked by acid like in ceviché
