Instantly Gratifying Nachos for Father’s Day

If you get home from work or school and you want something to curb those hunger pangs which is really quick to make and minimum effort, then my Instantly Gratifying Spicy Nachos are the ideal recipe for you.

For a party with friends or just something to have a nibble on in front of the telly, nachos are the perfect dish. Not only are they easy, there’s absolutely no fuss. And my secret weapon for making these instant: the microwave. Certainly you can do this in the oven but there’s something to be said for the microwave because these nachos are ready in just 50 seconds (for a 1 person serving).

The nachos are assembled on a microwaveable plate but for a larger number of people, I suggested you line a baking tray with parchment and assemble on the tray and place in the oven and serve them on the tray. One piece of advice is not to stack the tortilla chips too high otherwise the chips underneath won’t be touched by the salsa or cheese, keep it as one flat layer.

Nachos are very much customisable but the essentials are plain tortilla chips – I much prefer plain because lightly salted or ready salted can be overwhelming when it’s all covered in cheese – tomato salsa, chilli and cheese. It is at this point you can customise it; add chopped red onions, cured meats, pickled jalapenos (which are readily available but I had to buy them for 99p at Aldi during their Mexican week and I was very glad I did!) or switch up the cheese.

For my nachos, I chose to keep it simple and satisfying by adding on some salad leaves, chopped spring onions, fresh red chilli and some chopped up salami.

50g plain tortilla chips

60g chunky tomato salsa

Handful of salad leaves

Red chilli, sliced finely, seeds removed

Spring onions, sliced finely

5 slices of salami of your choice, torn

45g mature cheddar, grated

On your serving plate (or on a baking tray lined with parchment if you are grilling or baking), scatter the tortilla chips in a one layer. Dollop over your salsa evenly, making sure all the tortillas have some salsa on them.

Sprinkle over the chilli, spring onion, salami and salad leaves and then cover the whole layer with grated cheese.

Microwave for 50 seconds for an 800W microwave oven or grill/bake until the cheese has melted and is gooey. Serve straight away.
